WIAW: Ooey gooey & the year's first batch of pumpkin cookies


Rest days involve breakfast in bed with my laptop, oatmeal protein pancakes, and pumpkin-spiked coffee.

I was excited to try pumpkin protein goo yesterday afternoon. Mmm. I made another one for today, and now I'm almost out of my one big container of pumpkin... in 1/2 a week. Glad I found something else to enjoy besides pumpkin cheesecake mousse that I had for weeks on end!


I finished my bag of chili limon tortilla chip popchips and stopped by the store for nacho cheese flavor.


I love getting snail mail, which is why I joined Foodie Penpals as well as Fall Swap. A Bulu box came in the mail yesterday... I thought I cancelled it. Gotta check on that.

I mixed the coconut powder with my water today. I wasn't a fan.

I had a wicked chocolate craving. I wanted chocolate coconut water, but let's be real, it's expensive. Instead, I picked up a single serving of Green Superfood in chocolate. It's also expensive. :/

And then late last night, or rather for a couple of nights now, I caved in. I made the first batch of the season: Joy the Baker's super soft pumpkin chocolate chip cookies. That's a mouthful.

They're so colorful. I didn't have chocolate chips on hand so I used Unreal's unjunked chocolate candies. They bled. My kids at school ate them all. :)

I've been eating so many oatmeal protein pancakes, I thought I should make a crepe.

...the batter is the same, but I used a bigger skillet.

Oh, and besides the discovery of popchips tortilla chips and pumpkin protein goo this week, another exciting food event: the opening of a brand new Whole Foods near my work! I can't wait to visit and share tomorrow! :)

Today was a power yoga day followed by a strange minimum day at work. We got out early so I get to shower and pack all my belongings before work tonight.

  1. Pumpkin choc chip cookies sound delicious! Yep- I've been adding pumpkin as well... mostly to my oats and I'm ready to start baking with it again, too!

  2. You would not believe how many BIG cans of pumpkin we have in our pantry right now. And we hauled them across the country during our move (they were on super-sale about a month before we moved)! I go through phases where I put pumpkin in EVERYTHING--it's so versatile!

  5. I don't eat pumpkin or bake/cook with it very often, only because it's not on our standard grocery list so I forget to buy it! I'm in love with Panera's pumpkin muffins.
