I bought 2 mangoes yesterday and decided to try a mango whoopie pie. Sadly, they weren't very mango-y. I should have used more mango I guess. Also, I'm not a fan of these thin versions of whoopie pies though it's better than that thin and crunchy red velvet whoopie I made the other week.

Valentine Day attempts
I finally finished making Valentine's cards for my kids. I started them on Saturday when we had school so I had to finish it up.
I skipped classes on Friday because the hip hop instructor was sick and I really don't like the sub. Instead, I walked around for a little bit because it was nice out, baked, and slept a lot. I think I overdosed on sleep.
Here's how baking went. The red velvet whoopie pies have been the WORSE whoopie pies I've ever made. Sorry Cousin Johnnie's doesn't have a good recipe - maybe it's better at the restaurant - and the frosting didn't turn out as expected. It was eggy and gross and therefore, never made it into the whoopie pies.

I made both green tea cupcakes and red hot velvet cupcakes. I'm showcasing the red velvet cupcakes in this entry because it was part of my V-Day post. The cupcakes turned out dense, but the taste were just right. The frosting was tad complicated for me to finish.

I ended up making pink cookies because I combined the red and white icing of the red & white cookies. They were fluffy, but pretty typical of a cookie otherwise.

Big thoughts on a big dream...
I couldn't resist making the strawberry milk cake for pre-Valentine's Day. I'm not a master at cakes. Mine always crumble when I try to remove them from the pan so I left it in there. I couldn't decorate it the way they did, but it looked like a bed for this scantily clad Ken doll. The cake was good too. I used a different frosting though, the same one I used from strawberry whoopie pies - a cream cheese frosting. Yum.

Because I was in the mood for strawberry milk cake, I bought strawberry extract, strawberry preserves, and real strawberries. I had to make strawberry flavored whoopie pies because I was already set to make whoopie pies. The cookies were superb and not super soft like the Elvis whoopie pies.

I was talking to Yancey about starting a business. My co-workers ask if I'm trying to become a baker. Well, cupcakes are out. How about whoopie pies? There aren't really any businesses in the business of making them and I'm quite good at them. I also love that I could do so much with them such as these vanilla and matcha whoopie pies.

Finding success in whoopie pies
I had a bad day yesterday at work. The kids were insane with the 2 hour delay. Great workouts though since I got more time to do so.
Workouts today sucked. I left halfway through step class because I could not deal with the instructor's many mistakes. I skipped weights and got coffee instead but took 2 hip hop classes. I was able to do the first class because I knew all the moves, but I got upset when I couldn't master the moves in the second class. Clearly, I'm a perfectionist.
I was just frustrated so I decided to nap. I would've worked out at home except there's always a gazillion people in my home on weekends. It's so annoying. Instead of yoga, I skipped that too and decided on a bake-a-thon.
I wanted to find success today so I chose Elvis peanut butter whoopie pies. Success! I never cease to fail at making whoopie pies.



I feel sick now from all the sugar. I used spelt. Regardless, I think I'll start a raw food-like diet. I can bake as long as I don't keep buying sweets outside the home. I've been doing that A LOT lately. Baking is too good of a stress reliever for me to give it up.
