Recipe round-up

Sweet potato brownies sound so good. It makes me miss the South already.

I'd never want to be a real Southerner though, but I'm all about the sophistication of the French and yummy Croque Monsieurs.

What I love about being American also involves cheese: mac & cheese, apparently the best recipe.

Besides mac and cheese, there's only one other comfort food I swoon for, and this recipe sent to be Fab Fit Fun sounds perfect.


Low Guilt Banana Chocolate Streusel Loaf (Serves 8)

Banana bread batter:
2 cups gluten free flour
3/4 tsp baking soda
1/2 tsp salt
3/4 cup sugar
1/4 cup goat butter, softened
2 large eggs
1 1/2 cups mashed ripe bananas (about 3)
1/3 cup plain goat yogurt
1 tsp vanilla extract

Chocolate swirl:
2 cups chocolate
2 Tbsp goat butter

Streusel:
2 Tbsp butter
¼ cup sugar
1/8 cup flour
1 ½ tsp cocoa powder

Directions:
Preheat oven to 350°. Butter a loaf pan with some additional goat butter and set aside.

In a large bowl combine the sugar and the butter for batter. Add the eggs, bananas, yogurt, and vanilla.

In another bowl, combine the flour, baking soda, and salt. Add this combo to the butter mixture, folding carefully.

In a small saucepan, melt the chocolate and goat butter for the swirl. When the chocolate is shiny, gently fold into the batter. DON’T over mix, the goal is to have ribbons of chocolate, not a chocolate batter! Pour the batter into the pan and set aside.

In the sauce pan that is already a little chocolaty, combine the ingredients for the streusel. (Woohoo only one pan to clean!) Once all of the ingredients are nicely incorporated, put this crumbly goodness on top of the bread.

Bake for about 35 minutes, or until you can put a toothpick in the bread and it comes out clean (with the exception of the chocolaty goodness).
