Long night

Quick note from yesterday:


Happy Thursday!


I haven't had a chance to post since the internet's being wacky. Also, I've dedicated myself to AM workouts (today, it was Turbo Kick Round 43 in preparation for Saturday), work cause I have to, PM workouts at the gym (weights & Turbo Kick), and then baking for Bakesale for Japan as well as some baking for myself. :)

I was so proud of myself for making it through both weights and then cardio after. It's apparently the best combo, but I'm always fatigued from lifting. My shoulders are rocking though.

For the bakesale, I decided on green tea and strawberry cupcakes. I made them before without the buttercream. You all know I suck at making buttercream, but it worked this time and I credit my stand mixer for doing all the work. My use of icing tips could use some help though.

I'm dropping them off tomorrow before hip hop class...



Because I make holes in the cakes for vanilla custard, I had leftover green tea cake. I attempted quick and easy green tea cake pops. It's still a struggle though.


I also made those Gluten-Free Meyer Lemon Cupcakes with Vanilla Bean Buttercream except I ran out of powdered sugar and had leftover mojito frosting and ginger cream cheese frosting so I put that on instead. Oh, the cakes turned out great! The last time I tried gluten-free cupcakes, from BabyCakes' cookbook, they turned out dense and kind of gross (red velvet) or rubbery (vanilla).


Finally, I made pistachio cupcakes with strawberry buttercream cause I finally had some pistachios. This buttercream recipe wasn't as pretty though. I only made half the recipe since I can't take these to work. They were also quite delicious.

Excuses excuses

Our internet was down yesterday so I didn't get a chance to post my "today is awesome" post.


I also didn't get to share the goodies I made. I was so proud of myself for having half of one and giving Yancey the other half. It's another recipe from Sugarbomb Bakery: mojito cupcakes. They're the ones I had at Cupcakes for Cures and because I loved them, I made my own... with white rum cause that's all we had in the freezer. Anyways, they turned out fluffy and delicious. The quarter cup of rum makes the batter taste kind of gross, which is good for me since I always eat the leftover batter.



So far, everything they make is great. I can't wait for more delicious vegan recipes and am I glad they posted Gluten-Free Meyer Lemon Cupcakes with Vanilla Bean Buttercream. They say the batter tastes bad too... love it. Hahaha. Since I got home early from the gym, I may make a trip to Ingles for some strawberry preserves, especially since I need some supplies for green tea & strawberry cupcakes I'm making for Bakesale for Japan: vanilla pudding, butter, and also strawberry preserves.

I'm buying supplies, but since I baked everyday so far this week and I'm baking tomorrow, I'm giving it a rest tonight.

More sweat

I started my morning out with a toughie. When I tried to start this on Saturday, I complained of back pains but no more! I did it and it wasn't pretty. The fitness "models" in the video couldn't keep up either. When I was able to keep up more, I was proud of myself. With some work, I can totally rock the workout and perfect my form.

Within the first 10 minutes, I was dripping in sweat. Nothing has gotten me so sweaty lately so this was great. Even when I was on the elliptical for an hour, I didn't feel sweat dripping like I used to - I used to make that elliptical wet. It must be the weather (cold) cause my body isn't getting as hot as it used to.

Get on this video: Bob Harper's Body Rev Cardio Conditioning. It'll make you feel good and he's more personable than Jillian.


That said, I am pretty excited about Jillian's newest book as it isn't just about weight loss and eating. It is kind of, but Unlimited seems inspirational. At least I hope it's better than Crystal Renn's Hungry - I never did get through that.

Now though, I need to get back in to reading. Currently, I'm dragging Loving Frank around with me. Short chapters, easy read, but I have to get on it instead of being on the computer all the time.

I also stuck Post-Its all over my car with quotes like:

I also wrote down reminders of upcoming events, including:
  • "Spring break in 2 weeks. 2 days in Savannah!"
  • "Charlotte on Saturday!"
  • "Moving and quittin' this goddamn job in less than 3 months!"

It happened all in a day.

Sometime between the middle of October and now, I've gained a shit ton of weight. 15 pounds to be exact. Before then, I was all good. Then it all came at once, not a few pounds at a time. One day, nothing fit.

I just want to drop 10 now and look like Kim Kardashian... or something like that.
